Betawi Style 'Uduk' Rice

Ingredients:

- 500 gr White rice

- 750 ml coconut milk

- 500 ml water

- 2 bay leaves

- 2 lemongrass stalks, bruised

- 4 kaffir lime leaves

- Salt to taste

- Fried shallots for garnish

Instructions:

1. Wash the rice and soak in water for 30 minutes.

2. Grind all the spice paste ingredients in a food processor or mortar and pestle.

3. In a pot, combine the rice, coconut milk, water, bay leaves, lemongrass and kaffir lime leaves. Mix well.

4. Cook the rice mixture over medium heat until it starts to boil, then reduce the heat to low and cover the pot with a lid.

5. Cook for 15-20 minutes or until the rice is fully cooked and the liquid is absorbed.

6. Remove the bay leaves, lemongrass, and kaffir lime leaves.

7. Fluff the rice with a fork and serve with fried shallots on top.
